Sausage Pasta from Allrecipes.com


How yummy does this look?  And healthy!  Yahoo!  And quick!  Even better!



Here are the ingredients.


Fry up the sausage, add chopped onion and garlic.



Boiling pasta, simmering meat with rest of ingredients EXCEPT spinach.


Defrost the spinach first--it helps a lot.



I threw the cooked pasta in with the meat mixture to transfer
some of the flavor of the broth into the pasta.


Add spinach and heat through then add parmesan and toss.



YUM!!!!  Serve immediately or not. 
It's a wonderfully quick dinner that is satisfying and good for you.

Here is the recipe straight from allrecipes.com:

Ingredients
  • 3/4 pound pasta
  • 1 tablespoon olive oil
  • 1 pound spicy Italian sausage
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 (14.5 ounce) can chicken broth
  • 1 teaspoon dried basil
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (10 ounce) package frozen chopped spinach
  • 1/2 cup grated Parmesan cheese

Directions

  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and reserve.
  2. In a large skillet, heat oil and sausage; cook through until no longer pink. During the last 5 minutes of cooking, add onion and garlic to skillet. Add broth, basil and tomatoes with liquid.
  3. Cook over medium heat for 5 minutes to slightly reduce. Add chopped spinach; cover skillet and simmer on reduced heat until spinach is tender.
  4. Add pasta to skillet and mix together. Sprinkle with cheese and serve immediately.

Amanda's Creamy Chicken Enchiladas via BFF



And do they look scrumptious or WHAT!!!

BFF says make them full on fat like in Amanda's recipe.  My surgeon says avoid fats for two more weeks so I'm going to try them at a lower fat version (tonight, possibly) and then will post my altered recipe on my Recipes page if they turn out worthy of your time.  :)  And taste buds... 

BUT--BFF says that Amanda's recipe (kevinandamanda.com) is unbelievably fabulous and you need to try them at least once like that.

BFF's Macaroons!!!!!

Don't you just wanna lick the screen?  BFF made these today and I made her promise to bring some with her when she comes for the 10k Great Grape Stomp in October.  Yeah--I don't think we're going to eat real food, either.... At least not until we finish off the macaroons.... }:)

On the healthier side, here's the bbq chicken legs I made for dinner this evening.  They turned out FABulously!  I salt and peppered them, grilled them over 350' for 20 minutes each side, brushed on a bottled bbq sauce that was 35 calories a tbsp, flipped, brushed the other side, and let each side cook for another three minutes.  Figured they were 125 calories a leg.  Da Husband, who only wanted one, had three.  :)  Or maybe that was me.  But he had at least two.  :D 


And the other part of dinner, besides a salad, was a side of grilled zucchini spears.  I tossed four good size zucchinis, cut into spears, in about two tablespoons of olive oil and salt and pepper then put them on the grill for about ten minutes total.  We really like them this way and my kitchen wasn't heated up from the stove or oven.  Win/win!



You ever eat at Charley's Grilled Subs?  Ooooh!  They have wonderful salads and I assume their subs are fabulous but when I want to splurge, I go for their Ultimate Fries at 600 calories.  Yikes, you say?  Yes.  BUT--worth it!  :)  These are wonderfully crispy fries with cheddar cheese sauce, ranch dressing, and BACON!!!  Yes!!!  Bippity, Boppity BACON!!!!  *sigh*

Wonder if I can splurge today.....  OH--and they're under $3!!  Bargain! 


 

All righty!!!!  Raise your hand if you've eaten at Twigs Martini Bar and Bistro in Spokane, WA!!!
When I went to visit my BFF last spring we ate here after a day of flying and shopping.  Lucky us!!!  It was happy hour and the Lemon Drops were $5!!!  Oh, MAMA! those are good Lemon Drops!  For an appetizer we ordered their Garlic Fries with Gorgonzola dip.  HOOOOOO wheeeeeeee!!!!  I maintained (mostly because I hadn't finished my entire first lemon drop) and mananaged to eat only my share of the fries.  And the dip?  As they say on the East Coast--fuggedaboudid.  Holy Gorgonzola, Batman!  It was enough to curl your toes in ecstacy.....


And then we ordered.  And yes--that is a second Lemon Drop at my plate....  Sigh....
I ordered the shrimp pasta of some sort--like mac and cheese, maybe?  Remember I was on my second Lemon Drop at that point....

In any case, it was FABulous.  In the interest of calories, I think I ate all the shrimp and only most of the pasta....  And only half the fabulous foccacia bread (and I don't really like foccacia bread).  Such restraint....

If you are going to make the enchiladas...don't be a wheenie and do a low fat version. Do it the way they were intended to be made and run an extra mile or two. You'll be glad you did. :-)

Yeah--I hate looking back at that page because I REALLY want the Twigs fries again.... Wow.
